Harissa and Honey Halloumi Skewers

Spice up your summer grilling with these irresistible Harissa and Honey Halloumi Skewers. Ingredients
For the Skewers

1 block of halloumi cheese
-
1 heaped tsp harissa paste

1 tbsp runny honey
-
1 tbsp olive oil
-
Chili flakes (to taste)
-
Zest of ½ lemon
For the Herb Salad
-
10 cherry tomatoes
-
¼ cucumber
-
5 radishes
-
¼ red onion
-
Handful of chopped fresh herbs (mint, coriander, parsley)
-
Juice of ½ lemon
-
Olive oil
-
Salt & pepper
Method
-
Prepare the Marinade
In a shallow dish, mix the harissa paste, honey, olive oil, lemon zest, and chilli flakes. -
Cut & Skewer the Halloumi
Slice the halloumi horizontally, then cut each half into 3 long fingers. Thread each piece onto wooden skewers. Place the skewers in the marinade and let sit for at least 10 minutes. -
Make the Salad
While the halloumi marinates, chop the cherry tomatoes, cucumber, radishes, and red onion into small pieces. Toss together with the chopped herbs, lemon juice, olive oil, salt, and pepper. -
Grill the Halloumi
Preheat a griddle pan or BBQ until smoking hot. Grill the skewers for around 2 minutes per side, brushing with leftover marinade as they cook. -
Serve & Enjoy
Plate the skewers with warm flatbreads, tzatziki, the fresh herb salad, and any extra garnishes of your choice.
